1.- Boil tomate, onion, garlic and jalapeno until they are soft. Heat a tablespoon of oil in a casserole dish. When hot, blend the other ingredients and pour in the puree. Simmer for 10 minutes, then add epazote and season to taste. Turn off the flame and put this sauce (salsa) to one side.
2.- Beat 4 eggs and make 2 omelets. Fill them with grasshoppers and cheese. Cover the omelets with the tomato sauce and serve immediately.
